The Deep Violet Sacred Maize of the Peruvian Highlands

Cultivated across the valleys of the Peruvian Andes since the pre-Inca Mochica culture (c. 100 CE), Purple Corn (Maíz Morado) produces cobs with a deep, almost jet-black purple color. It forms the foundation of Peru\'s traditional spiced beverage, Chicha Morada.


1. World-Class Cyanidin-3-Glucoside ($C3G$) Concentration

The cob and pericarp of Purple Corn contain one of the highest botanical concentrations of Cyanidin 3-O-$\beta$-D-Glucoside ($C3G$):


  • Downregulation of Adipogenic Transcription: $C3G$ modulates the expression of adipocytokines and enhances the activity of AMP-activated Protein Kinase ($AMPK$) in muscle and liver tissues.

  • Endothelial Vasoprotection: Protects microvascular capillary walls from oxidative lipid cross-linking.


2. Traditional Chicha Morada Preparation

Boil whole Purple Corn cobs with water, pineapple peels, green apple slices, Ceylon cinnamon, and cloves for 45 minutes; strain and serve chilled with freshly squeezed lime juice.
